Crock Pot Pot Roast

3 1/2 lb chuck roast
1 lg onion, chopped
3 lg carrots, peeled and sliced
16 oz can diced tomatoes, undrained

Brown the roast on top of the stove beforehand, on all sides in a
little olive oil.
Place the onion and carrots on the bottom of the crock pot (you'll
need at least a 4 quart crock pot for this recipe). Put the meat on
top and season to taste with salt and pepper. Pour the tomatoes
over all and cook on low for 8 to 10 hours, or on high for 4 to 5
hours.

Grilled Picante Chicken

4 boneless, skinless chicken breasts
1 cup picante sauce

Marinate chicken in picante sauce for about 5 hours in the refrigerator
(or longer if desired). Place on grill when hot enough. Brush marinade on
chicken, turn after five minutes and brush marinade on other side. Do not
use the marinade after the first few minutes, because the marinade could
contain raw chicken juices. Chicken takes about 15 minutes to cook, until
no longer pink inside.

Ice Cream

This was created by Nicki Violetti, a fellow CrossFit trainer, enjoy.

Coconut Milk Ice Cream

1 can coconut milk
2 cups fresh fruit
1 tsp vanilla (optional)

This is an easy recipe that can be used to satisfy your hankering for a cool and refreshing dessert. We especially love using fresh strawberries, blueberries and peaches.

Simply place all ingredients in blender and puree. Pour into dessert cups (coffee cups work equally well) and put in the freezer for about 1 hour or until it has chilled to an ice cream-like consistency. Enjoy!

Note: Since the sugar content is quite low in comparison to standard ice cream, the mixture will freeze to rock-solid consistency if left in freezer too long. This does not affect flavor, but does slow the rate of consumption.

Makes 4 cups Zone blocks: This is a fat intensive recipe, but hey it’s ice cream! One can of coconut milk (13.5 oz) contains 45g or 30 blocks of fat. 2 Cups of berries is equal to 4 blocks of carbs. A one-cup serving of Coconut Milk ice cream yields 1 block carb, and about 7 blocks fat.

HOME BREW SHAKE

This shake was discovered by Erik accidentally, we were using OJ but we ran out so he used herbal peach tea. All shakes are made in The Magic Bullet.
The Virtus Brew
5 frozen strawberry's
2 small hand fulls of frozen blueberry's
2 scoops of chocolate protein
Fill half of the magic bullet cup with non sweetened herbal peach tea and mix
Total time 2 min. Let us know your thoughts

Shark dinner: Brush olive oil on 2 shark fillets, add cracked pepper and sprinkle some sea salt.
We use a skillet or the George Foreman grill for our meals.

Salad: Romain lettuce, 2 organic carrots, TBSP of cilantro and 1 sliced mango.
Dressing: 1 TBSP of olive oil, and 1/2 fresh squeezed lime.

Total time: 21:54
